Easy Chicken Salad Sandwich Filling

Today has been an horrendously busy day. My husband left on an overseas work trip very early this morning, so I was up before first light to see him off.

From there the day became progressively more hectic and frazzling (probably not a word, but never mind) until now, where I sit hiding behind a shut door in front of the computer, hoping my children are doing their homework, that the dishes will wash themselves, and that at last, tonight, my laundry will learn to become self-folding.

Fortunately, thanks to our favourite chicken salad mix, tomorrow's sandwiches will be quick and easy to make.

Easy Chicken Salad Sandwich Filling

1-2 cups cooked, diced chicken meat (we usually use leftovers from our Sunday roast chicken)
1 dollop good quality egg mayonnaise
1 dash sweet chilli sauce

Mix and keep, covered, for a couple of days in the fridge.

There 'tis. Simple, isn't it?
